This particular post is not so much about the recipe but more about the experience. And it’s one of my favourites till date!
My cousin Maneesha is visiting from Dallas and was over at my house for the weekend, along with her 3 year old son Neel. Since I only see them once in a year or two, she was very keen that these 2 days must be filled with one-on-one time for Neel and I, and we must plan as many activities possible to bond! The fact that he is an incredibly well behaved, intelligent and attentive baby made it very easy!
To get to the point, Maneesha mentioned that Neel loves to help her mix pancake batter! So I decided that the highlight of the weekend would be to get Neel to help me make waffles! We made chocolate chip waffles for breakfast together. He wanted to sit on my counter-top with the bowl and mixing spoon, which is not an easy task because I don’t have a big American island style open kitchen! But we made adjustments and Neel got his way… This is him…
Now for the recipe!!
Ingredients:
3 eggs
1- 3/4 cup flour/maida
1/2 cup white unsalted butter (you can use regular)
1- 1/2 cup milk
1/2 tsp salt
1 tsp baking soda
2 tsp baking powder
1 tsp vanilla extract
1/2 cup chocolate chips
Method:
Place all ingredients, except the chocolate chips, in a mixing bowl and mix with an electric mixer until combined. Stir in the chips. Then use in the waffle iron as per the manufacturer’s instructions! The batter makes about 7.5 – 8 waffles in my iron.
It is my personal theory that, unlike for pancakes, there is no need for an order of mixing, or a step-by-step addition of ingredients. Simply whizzing all the ingredients together is good enough. I may be wrong, but I’ve personally never felt a difference in the texture/ taste in either method. So I take the simple-r way out!
We had the waffles with butter+maple, butter+honey, butter+Nirulas chocolate fudge, peanut butter+strawberry jam! unfortunately I don’t have photos of that part. But I did freeze the leftover waffles individually in ziplocs and used them today for dessert!
I cut the waffles into fingers, placed them in a bowl with vanilla ice-cream. I dusted the ice-cream with Horlicks (chocolate flavoured malt powder) and drizzled the whole thing with maple – my very own waffle sunday! Here are the pics…
