Mojitos

Anybody living in Delhi would be familiar with the rising mercury situation. It’s unbelievable how much heat is radiating off the walls and ceilings! Day before yesterday, I came home with 3 huge bunches of fresh mint leaves with the intention of drying and storing them. AK & I decided to sneak some out of the whole lot and whip up some refreshing drinks. I didn’t much feel like alcohol that night so we made a Mojito & a Green Apple-Mint Cooler!

This is the Green Apple Mint (that AK repeated last night)!

First I washed some mint leaves and left them to drain…

Got together 2 lemons and cut each into 8 pieces (half, then half and then half again!)…

I divided them amidst 2 short & wide (whiskey) glasses…

Added mint in both…

Added a tsp of brown sugar in the left/ Mojito glass…

Using my pestle, I pressed down on it all a few times to release the juices and flavour from the lemon and mint…

For the mojito, I added 30 ml of Bacardi (yes we’re going to pretend that that is Bacardi. I ran out so I used Smirnoff, ok?!)…

15 ml of Cointreau…

15 ml of Triple Sec bar syrup (if I had actual Triple Sec liqueur, then I would have omitted the Cointreau altogether and used about 30 ml of Triple Sec. But the bar syrup is just flavoured sugar syrup and is TOO sweet)…

For the Apple-Mint Cooler, I added 15 ml of Green Apple bar syrup…

Added ice in both and topped with club soda!

And here they are…

Aahh! I can feel the heat slipping away already!

Note: Triple Sec is the preferred liqueur for Mojitos, but if you don’t have it then use other citrus liqueurs like Cointreau, Grand Marnier, Lemoncino. If nothing is available then make do without the liqueur, increase the Bacardi to 45 ml and substitute half the club soda with sprite. Won’t be a mojito by-the-book but it will still be delicious! And refreshing!
