A quick & easy cooler for the summer

Ingredients
  • 2 heaped teaspoons finely grated fresh ginger and all its juice
  • Juice of 4 lemons (approximately 8 tablespoons juice)
  • 4 teaspoons sugar
  • Ice cubes
  • Club soda to top
  • Lemon slices and/or mint sprigs for garnish
Instructions
  1. Place the ginger and lemon juice in a small saucepan and let it sit for a minute or two, until the colour changes to pink.
  2. Add the sugar and ¼ cup water to the saucepan, place it on high heat and bring it to a boil. Lower the heat and simmer for 2-3 minutes, stirring to ensure that the sugar dissolves.
  3. Take it off the heat and allow to return to room temperature. If you're in a hurry, shake it up with a few cubes of ice in a shaker.
  4. Divide this between 4 glasses. Add ice cubes and top with soda.
  5. Serve garnished with lemon slices and/or mint sprigs.
Notes
You can add a few slices of green apple or cucumber to the drink to make it prettier and also for more flavour.
