Homemade Chai Masala Powder

A simple spice mix to make the perfect cup of masala chai - great for home use or even as a personalised gift

  • 20 gms green cardamom pods
  • 6 gms black peppercorns
  • 8 gms cloves
  • 50 gms cinnamon sticks
  • 140 gms dried ginger, whole or flakes (but not ginger powder)
  • 25 gms fennel seeds (saunf)

  • Mixer Grinder
  1. Weigh out the spices.
  2. Grate ginger finely and keep aside.
  3. Place the other ingredients in the medium jar of the grinder and process to a coarse powder.
  4. Add the grated ginger to the jar and give it a quick whirl to mix.
  5. Store in an airtight jar.
  6. Use 6 gms (~2 tsp) for 1 teacup of masala chai.
